Thirty-five years later, the pasta is still rolled fresh, the sauces still simmer all afternoon, and the bread is still baked before service.

What Made-From-Scratch Tastes Like

There is a difference you can taste immediately. The Fettuccine Alfredo at Ciao Italia starts with pasta dough made that morning. The Bolognese ragu simmers for hours before it hits a single plate. The Pappardelle al Cinghiale — wild boar ragu with porcini mushrooms and pecorino — is the kind of dish you cannot get at a hotel restaurant or a chain. It does not exist on those menus because it takes too long to make.

The Chicken Parmigiana is breaded and cooked to order, not pulled from a warmer.
